Real Food – Easy Chicken Spinach and Mushroom Pasta

Posted on 13 July 2010 by MommyKnows

I made this recipe up to use the fresh and locally grown spinach and mushrooms in my Organic Box delivery. Damn it’s good! It shouldn’t take much more than 12-15 minutes to make (depends on how long it takes the water to boil).

chicken mushroom spinach pasta

Ingredients:

chicken mushroom spinach pasta

1-2 chicken breasts (chopped into 1/2 inch slices)
1-1.5 cups of chopped fresh spinach leaves
1 cup of sliced mushrooms (any sort)
1/4 cup of butter
3 large cloves of garlic
1/4 cup of grated parmesan cheese
1 tsp salt
1 tsp pepper
6 cups of cooked pasta of your choice.

Directions:

Put pasta water on to boil.

Now start chopping up the mushrooms, spinach, garlic and chicken.

When water is at a full boil add pasta.

Add butter to a large skillet or wok (wok works best). When butter is melted add chicken and saute. Now add the mushrooms and the garlic to the cooked chicken, saute until tender. Add salt and pepper. When pasta is cooked drain and add to the wok/skillet.

I cooked the works on med-high.

Add 1/2 the parmesan cheese and mix.

Serve immediately sprinkle with remaining parmesan.

Enjoy!

Desperately Seeking Pie Crust (I’m Guest Posting …)

Posted on 17 November 2009 by MommyKnows

I found a great new recipe. I am sharing it today at my friend Sandy’s Blog the Reluctant Entertainer. Sandy and I met at the Kraft Blogger Event in Chicago in August, she is fabulous! She’ll love you all too … so go on over and tell her I sent you :)

Raise your hand if you’re afraid of pie crust. I’ve got both of my hands raised high above my head, and I am waving frantically. The fear stops here! There is no need with this EASY NO ROLL PIE CRUST from Joy the Baker.

pumpkin pie

I’ve long heard the ‘secrets’ of good crust from both of my grandmothers. One insisted it was the ice cold water and no over mixing. The other cold lard and no over rolling. Both of these ladies could make a mean pie (one still does) and I’ve been lucky enough to spend most of my forty years, a pie crust virgin. Oh I dabbled in it in my twenties, turning out tough crusts that tasted inferior to even store bought. It didn’t seem worth the work … and I was happy to give it up. Frankly, the rolling scared me.

Easy Norwegian House Slippers (the crochet version by Mommyknows)

easy felted norwegian house slippers by mommyknows

Last week after Craftzine so kindly put my Candy Sushi post up on their site, I found this nifty tutorial for Norwegian house slippers over there as well.

norwegian house slippers

I loved them, and the crafty side of me, that I try so very hard to suppress, just came bubbling to the surface. I was going to make these slippers!

There were a few problems though …

  1. I didn’t have the right weight of yarn –> Ah, to heck with that, I’ll just make do with what I do have, as long as it’s wool and will felt … who cares right?
  2. I wanted to make these for Georgia and the size chart was for adult sizing –> ah, who cares, I’ll figure it out. I’ll make them big and keep felting them until they work.
  3. I don’t knit –> screw the knitting, I’ll crochet them (I made a 1/2 a dish cloth once, how different/difficult can it be?).

So once again, I was making a craft and following none of the instructions!
